The winemaking process

Winemaking is based on traditional methods where the grapes are destemmed and fermented either in stainless steel and/or the traditional barrels.

Use of sulphur is minimal, the grape juice is allowed to ferment naturally avoiding use of commercial yeasts and enzymes.

Integrity of the original grape juice is maintained resulting in wines which can be enjoyed for many days – even a week or so after being opened.
